What Teddy Bear’s Picnic: Join us for a day of fun on the Bank Holiday Sunday when the Zoo will host a Teddy Bears Picnic where there will be something for everyone in the family! Cheat’s Mushroom and Spinach Lasagne

Serves 4

Prep time 15 mins

Cooking time 25/30 mins

Ingredients

30ml/2 tbsp olive oil
180g pack spinach leaves
2 cloves garlic, chopped
250g pack chestnut mushrooms, sliced
400g can chopped tomatoes with basil
300g pack fresh lasagne sheets
2 (200ml) tub half fat crème fraîche
100g/40z mature cheddar cheese
2.5ml/1/2tsp freshly grated nutmeg
salt and freshly ground pepper

Method

Preheat the oven to 200c/Fan 180c/Gas mark 6. Heat 1tbsp of the oil in a large frying pan, and half the garlic and spinach leaves and strir fry for 1-2 mins until the leaves have wilted. Remove from the heat, season well and set aside.

Add the remaining oil to the pan, add the mushrooms and cook over a high heat for 6-8mins, stirring occasionally until the mushrooms are nicely browned. Stir in the remaining garlic and sizzle for 30 secs. Stir in the tomatoes, bring to the boil and simmer over high heat for 2mins or until reduced. Remove from the heat and season to taste.

Season the crème fraîche with the nutmeg, salt and ground black pepper, then mix well. Lightly oil an 1.4ltr/2 pint ovenproof dish.

Place a layer of lasagne over the base, trimming it to fit. Top with half the mushroom mix, then more lasagne. Spoon a third of the crème fraîche over, scatter half the spinach and a third of the cheese. Repeat these layers once more. Now place a final layer of lasagne on top, spread over the remaining crème fraîche and cheese.

Place on a baking tray, then bake for 25-30 mins or until the lasagne is tender and the top golden. Leave to stand for 5 mins before serving with a green salad.

Fun, Frolics and Serious Science in the Indonesian Rainforest

Cadbury Buttons go Fairtrade

Cadbury’s famous Dairy Milk Buttons are not only celebrating their fiftieth birthday in 2010 – this year they have also become Fairtrade.

The Buttons have been produced using Fairtrade chocolate since 22 February 2010 – so you can enjoy them safe in the knowledge you are supporting the Ghanaian farmers who grow the cocoa beans used to make this classic treat.

But if you’re wondering if going Fairtrade has affected the flavour of Cadbury Buttons in any way – rest assured they taste as deliciously chocolatey as ever!

Cadbury kindly sent us some packs to try and both adult and junior tasters in our impromptu sampling session gave them a resounding thumbs up.

Cadbury Dairy Milk Buttons have been enjoyed by the British public since 1960, and although they’re a brilliant treat for kids, we reckon there are plenty of mums and dads out there who are also rather partial to a few.

Ella’s Kitchen and M&S launch new food ranges for kids

If you’re after ideas for kiddie-friendly snacks and meals that are healthy to boot, M&S and Ella’s Kitchen both have some new products for children that might be just what you’re looking for.

Ella’s Kitchen, well-known for their organic baby food range, have now brought out snacks for children over 12 months. Three new organic snack ranges have been launched to help parents give their kids a tasty break, safe in the knowledge that the treats are good for them.

The three new snacks include:

Baby cookies (rrp £1.99 per pack) – Organic soft biscuits with Milk ‘n’ Vanilla or Apple ‘n’ Ginger, Bakey-bakies (rrp £1.99 per multi-pack -  4 in a pack) – Wholegrain oat crackers with Cheese ‘n’ Spinach or Apple, Raisin ‘n’ Cinnamon.  Plus, Stacks of Sticks (rrp 99p per pack) – Available in two varieties including Wholegrain or squished up Orange ‘n’ Pear.

As well as the new snacks range, Ella’s Kitchen has also added new recipes to its existing ranges, all in bright and colourful squeezy pouches, and launched new pasta + rice that come in new convenient boil-in-the-bag sachets.

Ella’s Kitchen clearly display their ingredients on the front of their packs to make it easy for parents to see just what they’re feeding their kids. The new snacks ranges and recipes are available at Tesco, Waitrose and Ocado.

Marks & Spencer is also making child’s play of feeding your children healthy and nutritious food with the new Simply Kids range.

M&S has created the range as a healthier choice for children and only uses store cupboard ingredients, which means they are free from artificial colours, flavourings or preservatives. The meals are nutritionally balanced and were developed in accordance with government GDAs for 5-10 year olds, which means they have balanced levels of protein, carbohydrate including sugars, fat and salt.

Spaghetti & Meatballs (£1.89) made with Aberdeen Angus minced beef, Pasta Shells & Prawns (£1.99), and Macaroni & Cauliflower Cheese £1.49)  will be new in store at the end of March.

Because children can be fussy, Simply Kids meals are packed with ‘hidden’ vegetables – the Nice Rice Chicken (£1.89) made with Oakham chicken and the Sausage, Mash & Gravy (£1.89) made with Muir Den pork contain one of your recommended five fruit and vegetable portions a day.
